How to enjoy our jarred Kimchi:
Our fermentation process gives the kimchi a sour, tangy, slightly effervescent aspect, tasting of garlic and ginger with a moderately high heat level from the red pepper powder. The white/mild kimchi has no red pepper so no heat at all, tasting more of garlic and ginger. There's no limit on our kimchi's uses, but here's a list of the ways we enjoy it: - Kimchi can be eaten on its own straight out of the jar but is typically used as a garnish or side dish like a pickle. -It goes great with noodles, rice, quinoa, on a salad, in an omelet, on fried eggs etc. -Add it to a stir fry, hot dog or hamburger -You can put it on fish, beef, pork, chicken, lamb etc. as a topping -Also great on pizza, poutine, or mixed with mayonnaise for a hot mayo or sour cream for perogies -Great in borscht for its sour aspect, it also goes good in any neutral soup to "jazz" it up |
How to enjoy our dehydrated Kimchi:
Our friend Ian from "Food for Folks" takes the kimchi that is usually jarred and turns it into a dehydrated food for us. This process is done over a long period of time at a low temperature with air circulation, (the indoor version of "sun-dried"). This concentrates all the natural flavours and leaves the kimchi with a slightly leathery, chewy texture. This wonderfully healthy food explodes with taste and can be enjoyed in several ways. Here are a few of our favourites: -You can chop up the dehydrated kimchi flakes and garnish your salad with it like bacon bits. -Mix them with oil and vinegar for an uber-healthy and tasty salad dressing or to dip a baguette in. -With mayonnaise for a hot mayo or with sour cream on a baked potato. -Add a few flakes to a cup of hot water or bone broth and let steep for 5 minutes for a savoury tea or broth. -Or, if you dare, you can eat it right out of the bag. Our dehydrated kimchi comes in recyclable, resealable bags that need no refrigeration and can go anywhere. They are great for hospital stays, hiking, biking, camping, driving, flying, taken to work, or mailed as gifts. The possibilities are endless! |

Our Traditional kimchi is made with Suey Choy (Napa Cabbage), Lo Bok (Korean Radish), green onions, fresh garlic and ginger ground into a puree instead of powders, organic sea salt, Canadian # 1-grade raw honey, anchovies, and a delicious high-end red pepper powder imported from Korea and favored by Koreans for making kimchi.

Dried Kimchi
Our dehydrated kimchi doesn't have to be refrigerated and is great for hiking, biking, car travel, to have by the computer while working, as well as lots of other uses!
It can be eaten as a snack, you can add a couple flakes to a cup of warm water and let it steep to make a savory healthy tea, add to a bone broth or a bland soup to jazz it up, chop it up and use it on ramen noodles, a salad, or mixed with a mayo or sour cream, etc.
It comes in 30-gram containers and is roughly the equivalent of one of our 500ml jars in a dried form. The dehydrated uses all the same ingredients as is in the jars too.... nothing added and nothing taken away!!
